This Chianti Classico is intense deep ruby. On the nose it is fruity with aromas of cherry and plum confiture, lightly spiced with black pepper and juniper notes. Dry on the palate, it is medium-full bodied with soft tannins and good minerality.
Enjoy with pasta with traditional ragù, truffles or mushroom and grilled meat.
Composed of 90% Sangiovese and the 10% native Italian and local varieties. The grapes have been harvested by hand in baskets at the end of September - mid October and is a blend of all of Dievole’s 16 vineyards.
Eighty percent of the wine is aged in the wooden vats made of French oak and 20% is aged in French and American barriques for about 12 months before bottle ageing for a further 6 months before release to market.
